Director Hellman used locals, some of them actual full-time cockfighters, to populate the screen throughout Cockfighter.  In an effort to make sure they looked and acted as naturally as possible, Hellman would frequently film scenes without the traditional "Action!" declaration.  The non-professional on set actors would be under the impression that they were merely doing a rehearsal.

Among those hired as an extra for one scene, was author Charles Willeford's wife.

At one of the shoots, at a ranch 25 miles outside of Forsyth, Georgia the Allman Brothers paid a visit to the set.
